Wheat-Free Banana Oat Pancakes

I recently learned that you can make your own oat flour by food-processing uncooked oats.
I was skeptical about making pancakes with said flour at first, but they came out awesome!


1 1/2 cups rolled oats (I used old fashioned)
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp ground cinnamon
1 tbsp ground flax + 2 tbsp water – mixed (equivalent of 1 egg)
1 cup almond milk
1/2 tsp vanilla
1 banana – mashed

The How To
Put oats in food processor and blend for 1 minute (until it looks like flour).

Combine oat flour, baking powder, salt, and cinnamon in a large mixing bowl.
Combine almond milk, flax egg, mashed banana, and vanilla in a small bowl and mix well.
Pour liquid mixture into dry mixture and stir until combined. Set aside for five minutes to allow all the ingredients to bind a bit.
In the meantime, heat a griddle to medium heat.
When hot, pour about 1/4 cup of batter per pancake.
Cook until bubbles appear on surface of pancake and edges start to appear dry.
Flip and cook until lightly browned!


I served mine with chopped strawberries mixed with a heaping spoonful of blueberry all-fruit spread.
